MEDITERRANEAN GRILLED EGGPLANT, WITH OUR COLD SMOKED CHILLI SALT

INGREDIENTS

  • 1 eggplant sliced in half lengthwise
  • 4 tsp of cold smoked chilli salt
  • ½ cup fresh coriander
  • 1 cup quinoa
  • 4 Tbsp Olive oil
  • 2 tsp garlic
  • 1 lemon
  • 1 red onion diced
  • 1 tomato diced
  • ¼ cup feta cheese

Method

  1. In a baking dish add your eggplant then brush with olive oil, cold smoked chilli salt and pepper, garlic and bake at 220 degrees for 20-25 minutes until cooked through.
  2. When the eggplant is cooked chop up the tomatoes the onions and mix them together in a bowl with the cooked quinoa and feta cheese.
  3. Sprinkle cold smoked chilli salt to the quinoa stuffing and then add lemon salt and pepper to taste.
  4. Add 1 tsp garlic and add to the top of the eggplant then grill for an extra 10 minutes.
  5. Add fresh coriander and extra lemon to the top and serve.
