PASTA WITH WILD MUSHROOMS, GARLIC & SMOKED OLIVE OIL



Serves 2-4 people


Ingredients

2 tablespoons EveryOrganics Cold Smoked Extra Virgin Olive Oil, plus extra to serve

300g wild mushrooms of your choice, we used a combination of shiitake and enoki mushrooms

250g angel hair or spaghetti pasta of your choice, cooked as per the packet instructions

1/2 cup parsley, finely diced

EveryOrganics Cold Smoked Shroom Salt


Method

Cook the pasta as per the packet instructions reserving 1/2 cup of the pasta cooking water.

Leave the pasta in the reserved cooking water whilst you prepare the mushrooms. This will prevent the pasta from drying out.

In a medium sized frying pan heat 2 tablespoons of EveryOrganics Cold Smoked Extra Virgin Olive Oil over a medium heat. Add the mushrooms and pan fry until softened and slightly crispy.

Serve the mushrooms over the pasta, sprinkle with fresh parsley, EveryOrganics Cold Smoked Shroom Salt and a good drizzle of EveryOrganics Cold Smoked Extra Virgin Olive Oil.
