Using the delicious slow-smoked honey & sea salt from @everyorganics_everymite, this cake is packed full of decadent flavours that will make your tastebuds dance. Serves: 8-10 | Gluten Free | Vegan Optional (just replace butter with substitute)

Ingredients Base Layer: 3 cups pitted organic medjool dates 3 cups raw macadamias Filling: 4 cup organic cashews, soaked overnight or soaked for 30 minutes in boiled water 2/3 cup coconut oil, melted 1 cup @everymite_everyorganics Slow Smoked Honey 1 1/2 cup coconut milk 2 tsp. Very Vanilla vanilla paste Topping: 4 Organic Pears 4 tbsp butter 8 tsp @simplyorganics cinnamon 1/2 cup EveryOrganics Slow Smoked Honey 100mL Water A pinch of EveryOrganics Slow Smoked Sea Salt Method: 1. Make the base layer first. Blend dates until a paste is formed and set aside. Next blend macadamias until flour is formed. Combine the two together in blender until a loose dough is formed. If too wet add more macadamia, if too dry add more dates. 2. Lather 25cm spring form cake tin with coconut oil, or use baking paper. Evenly press base mixture into the bottom of tin. Set aside in the freezer and rinse the blender. 3. Place all filling ingredients into blender. Process/ pulse until a very smooth paste is formed. Scrape down sides every couple of minutes. Remove base from freezer and pour in filling layer. 4. Cover and place in freezer overnight. 5. Peel and slice pears thinly, and then in half to create a crescent shape. Transfer to skillet and add in half of remaining topping ingredients. Let pears simmer for 5- 10 minutes, adding more water if required. 6. Once pears are softened and glazed, transfer to cooling rack. Rest for 15 minutes before transferring to a container. 7. Meanwhile, place remaining topping ingredients in a skillet and bring to broil, stirring to ensure caramel does not burn. Let cool & store in container. 8. Prior to serving, reheat pear and caramel. Arrange pears in spiral motion and drizzle caramel & sprinkle @everyorganics_everymite Slow Smoked Salted Sea Salt on top. Enjoy!
