BREAKFAST SUB with SCRAMBLED TOFU

Go make your own Subway sandwich at home because you can pack in as many stuffings as you want.

Here I’ve got a thin layer of my favorite super-spread @everymite, juicy tomato, crunchy cucumber, and perfectly done, creamy scrambled tofu (recipe inspired by @bowlofsunlight) and topped with lots of HEMP SEEDS which are super rich in healthy fats!!

I had this with Ginger Kombucha @jivakombucha which kicked start my digestion in the morning :p


  • 1 ripe tomato, sliced
  • 1 small or 1/2 large avocado
  • 2 mini cucumbers
  • 1 batch of scrambled tofu (recipe below)
  • 2 Crusty Bread Rolls

Perfect scrambled Tofu:

Ingredients

  • 1 block (300g) silken tofu
  • 1 tsp cooking oil or vegan butter (I used EVOO @bertollioliveoil_australia)
  • 1 tbsp Nutritional yeast @honesttogoodnessau
  • 1/4 tsp ground turmeric @mindfulfoods
  • 1/2 tsp each of garlic and onion powder
  • 1/2 tsp paprika
  • 1/2 tsp black salt (which gives an eggy flavor; can be subbed with normal salt)
  • Pinch of ground pepper
  • 2 tbsp unsweetened soy milk @sogoodau

Method:

Heat oil in a frypan @scanpan_australia and add in the whole block of silken tofu. Pan fry for 1-2 minutes until one side gets golden brown. Use a wooden spatula to crumble the tofu into small pieces and add in the turmeric, Nutritional yeast, garlic & onion powder, paprika, black salt, and black pepper. Stir fry for 1-2 minutes then add in the soy milk; cook until desired consistency.
