Serves 2-4 people
Ingredients
- 2 tablespoons EveryOrganics Cold Smoked Extra Virgin Olive Oil, plus extra to serve
- 300g wild mushrooms of your choice, we used a combination of shiitake and enoki mushrooms
- 250g angel hair or spaghetti pasta of your choice, cooked as per the packet instructions
- 1/2 cup parsley, finely diced
- EveryOrganics Cold Smoked Shroom Salt
Method
- Cook the pasta as per the packet instructions reserving 1/2 cup of the pasta cooking water.
- Leave the pasta in the reserved cooking water whilst you prepare the mushrooms. This will prevent the pasta from drying out.
- In a medium-sized frying pan heat 2 tablespoons of EveryOrganics Cold Smoked Extra Virgin Olive Oil over a medium heat. Add the mushrooms and pan fry until softened and slightly crispy.
- Serve the mushrooms over the pasta, sprinkle with fresh parsley, EveryOrganics Cold Smoked Shroom Salt, and a good drizzle of EveryOrganics Cold Smoked Extra Virgin Olive Oil.
