Chocolate Cupcakes with EveryMite

Ingredients:
Cupcake:
- 200g fresh dates, soaked in boiling water
- 2 tbsp maple syrup
- 2 tbsp extra virgin olive oil
- 100g avocado
- 2 eggs
- 1 tsp vanilla extract
- 225g self-raising flour (or use gluten-free flour)
- 50g cacao powder
- 1/2 cup milk of your choice
Avocado frosting:
- 100g avocado
- 25g cacao powder
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tsp Low Salt Everymite
Method:
- Preheat oven to 180°C. Grease cupcake tins with some coconut oil.
- Process date mixture, maple syrup, oil, avocado, eggs and vanilla in a food processor until the mixture is smooth.
- Sift the flour, cacao powder and salt into a large bowl. Add the avocado mixture and milk. Add some more milk if the mixture is too thick! Fold until just combined.
- Transfer to the prepared cupcake tins and smooth the surface of each.
- Bake for 20 mins or until a skewer inserted in the centre of the cupcake comes out clean.
- Set aside in the pan for 10 mins before turning onto a wire rack to cool completely.
- To make the frosting, place the avocado, cacao powder, maple syrup, vanilla, EveryMite, and salt in a food processor and process until combined and smooth. Spread over the top of the cake.
- Top with chocolate-covered chickpeas or nuts!
