Remove the corn from its husk and snap in half. Use a large sharp knife and on a sturdy surface, slice the corn directly in half lengthways. Slice again. You should end up with 4 thin rib-style pieces.
Combine the EveryOrganics Cold Smoked Extra Virgin Olive Oil, smoked paprika, cumin seeds, and coriander powder in a small bowl and brush over the corn ribs.
Lay the corn ribs on the baking tray and bake in the oven for 20 minutes or until the corn is starting to take on a charred appearance.
