Ingredients
¼ cup EveryOrganics Cold Smoked Extra Virgin Olive Oil
2 tsp EveryOrganics Cold Smoked Salt & Pepper
2 tsp onion powder
2 tsp paprika
¼ cup olives
½ cup chickpeas
¼ cup feta (can be dairy free)
1 eggplant chopped
1 zucchini chopped
2 cups pasta spirals
½ cup parsley
½ lemon juice
4 tsp garlic paste or powder
½ cup coconut cream
METHOD
Cook the pasta in boiling water until cooked. Drain the pasta and set aside.
In a baking dish put the cold smoked olive oil, olives, EveryOrganics Cold Smoked Salt & Pepper, garlic paste, paprika, chickpeas, chopped eggplant and chopped zucchini and mix the vegetables then cook in the oven at 200 degrees for 25 minutes until crispy.
In a bowl, combine the cooked pasta and the baked veggies and add in ½ cup of coconut cream, and feta cheese. Mix together well.
Garnish with parsley, EveryOrganics Cold Smoked Extra Virgin Olive
Oil, EveryOrganics Cold Smoked Salt & Pepper, and an extra dash of lemon juice. Enjoy !
