INGREDIENTS
- 1 cup almond flour
- 1 cup self-raising flour
- 2 tsp EveryOrganics Cold Smoked Extra Virgin Olive Oil
- ¼ cup EveryOrganics Cold Smoked Raw Honey
- 1 tsp cinnamon
- 4 Tbsp coconut sugar
- 1 tsp vanilla essence
- 4 tsp butter or coconut oil
- 2 eggs
- 1 cup plant milk
- 1 cup sliced tinned organic apricots
- 1 tsp icing sugar
Method
- In a bowl, mix together the honey, cinnamon, vanilla essence, coconut sugar, olive oil, coconut oil or butter, eggs, plant milk, & ½ of the apricot slices.
- Gradually add in the almond & self-raising flour.
- Mix together well until it comes together like a cake batter then top with extra apricots.
- Pour into a cake tin & bake at 190 degrees for 20-25 minutes until a skewer comes out clean, slice into squares.
- Dust with icing sugar.
