COLD SMOKED RAW HONEY & APRICOT CAKE

INGREDIENTS

  • 1 cup almond flour
  • 1 cup self-raising flour
  • 2 tsp EveryOrganics Cold Smoked Extra Virgin Olive Oil
  • ¼ cup EveryOrganics Cold Smoked Raw Honey
  • 1 tsp cinnamon
  • 4 Tbsp coconut sugar
  • 1 tsp vanilla essence
  • 4 tsp butter or coconut oil
  • 2 eggs
  • 1 cup plant milk
  • 1 cup sliced tinned organic apricots
  • 1 tsp icing sugar

Method

  1. In a bowl, mix together the honey, cinnamon, vanilla essence, coconut sugar, olive oil, coconut oil or butter, eggs, plant milk, & ½ of the apricot slices.
  2. Gradually add in the almond & self-raising flour.
  3. Mix together well until it comes together like a cake batter then top with extra apricots.
  4. Pour into a cake tin & bake at 190 degrees for 20-25 minutes until a skewer comes out clean, slice into squares.
  5. Dust with icing sugar.
